baked parmesan chicken


Another meal with ingredients I mostly have around. This is a HUGE hit with Chase, he ate it all. I got this from Just Cook Already, but modified it slightly. It calls for fresh thyme, basil and oregano, which I am sure tastes great, but I am lazy so I used dried - which still tastes great.

Ingredients:

1/2 cup butter
2 cloves garlic, minced - or 1 1/2 teaspoons minced garlic
1 cup dried bread crumbs
1/3 cup grated parmesan cheese
1 tablespoon dried thyme
1 tablespoon dried basil
1 tablespoon dried oregano
1/4 teaspoon pepper
1/2 teaspoon salt
6 chicken breast halves

Directions:

Preheat oven to 350 degrees. melt butter with garlic over the stove. when butter starts to bubble, remove from heat and allow to cool slightly. Stir breadcrumbs, parmesan, thyme, basil, oregano and salt and pepper in bowl. Dip chicken halves in butter, and then in bread crumb mix. place chicken in baking dish. I sprinkle some extra bread crumb mix on top, and then drizzle with extra melted butter. Bake 50 to 55 minutes. Serve with red sauce and pasta. I used whole grain spaghetti, which was great. And Matt had no clue it was whole grain.

  1. wade seriously whines every time i use wheat pasta. he has to have a combination. i'm impressed matt couldn't tell the difference. i'll have to try this one. wade would like it. no cooking for me tonight. it was crown burgers before the jazz game and good old kraft mac and cheese for the kids.

  2. the brand was barilla and it was seriously good. i have made this a few times and it is always a hit and very very easy.

  3. Laura, I MADE THIS LAST NIGHT FOR MY BOYFRIEND (from just cook already)! CRAZY. I used the fresh ingredients and it tasted great. I made it with mashed potatoes and used the extra garlic butter in them. We also had stuffing and bread and buttered brown sugar carrots. Delicious. The best part was that is was super easy.

  5. i made this tonight and wade loved it. seth didn't like the "stuff" on the chicken, but brushed it off and ate it anyway. drew even ate 1/2 of his tiny portion, but that's progress. i made it with mashed potatoes like brooke did, but wade said he would like it with pasta and pesto.
